Easy Paleo Coleslaw

This coleslaw recipe tastes great and is super easy to make and paleo approved!  It is great on top of chicken and vegetable recipes such as what is in the picture!  Try it out and I know you will love it!

Easy Paleo Coleslaw Ingredients

4 cups organic coleslaw mix (cabbage with shredded carrots)

1 cup shredded red cabbage

1/2 red bell pepper, sliced thin

1 pound of chicken breasts thinly sliced

1/4 cup pumpkin seeds

2 green onions, finely sliced

2 avocados

Chicken Seasoning Ingredients

1 tsp pepper

1 tbsp garlic

Dash of sea salt (best is pink salt)

1 tbsp coconut aminos

2 tsp Braggs Blend of Herbs and Spice OR rosemary and tarragon

Dressing Ingredients

1/4 cup coconut aminos

2 tablespoons apple cider vinegar

2 tablespoons extra virgin olive oil

1 teaspoon minced garlic

1 teaspoon grated fresh ginger

3 large pitted dates (optional)

Stevia to taste (optional)

Dash of sea salt (best is pink salt)

Yield:  4 servings

Easy Paleo Cole Slaw Directions:

  1. Mix the coleslaw mix, shredded red cabbage, red bell pepper, pumpkin seeds, and green onions together in a large bowl.
  2. Cook chicken in coconut oil on the stove top on medium heat until cooked through. Add Chicken Seasoning Ingredients to the chicken.
  3. Mix the Dressing Ingredients to a blender or food processor and blend until well blended.
  4. Add the dressing to the salad bowl and mix well.
  5. Serve on plates and top with chicken and avocado slices.

Notes:  For low-carb, ketogenic diets you will want to avoid using the dates.

Just like the majority of my clients do, I live a fast paced and busy life and just trying to keep my home put together, is quite a challenge!  I know so many of you have a similar story! We like to keep busy and accomplish everything! Oh, and of course practice self-reflection and grounding =)

I also like for food to be practical and cost effective in addition to being super healthy and low carb!  This recipe is quick and easy. It also gives you leftovers! The vegetables used in this will stay nice and crunchy for several days. You can even double the recipe in order to get more meals out of it.

I store single serving sizes of the coleslaw in glass Tupperware bowls and top with chicken. I bring avocados with me and add them fresh on top before I eat. This keeps me full and satisfied!
