Pound Cake with Berry Sauce:

Pound Cake with Berry Sauce

Yield 10 Slices

Ingredients:

Pound Cake Instructions:

Step #1:  Gather all the ingredients.

Step #2:  Whisk eggs, melted butter, maple syrup, vanilla and stevia.

Step #3:  Whisk in remaining ingredients and let it sit for 10 minutes to thicken.

Step #4:  Pour into a loaf pan and bake at 350 degrees for 25-30 minutes.

Berry Sauce Ingredients:

  • 1 cup fresh/frozen raspberries
  • 2 cups sliced fresh/frozen strawberries.

Berry Sauce Instructions:

Step #1:  Gather berries.

Step #2:  Pour berries in a pot and stir around on low heat until they become soft and juicy and stir for a few mins and remove from heat.

Dr Jockers Comments:

This pound cake can take a little while to make but it is a tasty treat that makes for a great party cake for birthdays and special occasions.  It tastes amazing and is free of inflammatory grains and uses keto sweeteners in stevia and monk fruit.

The coconut flour adds in good fats and fiber.  The pasture-raised eggs and butter are full of powerful nutrients such as essential fats, vitamin A, choline, lutein, zeaxanthin and vitamin E.  These good fats and carotenoid antioxidants promote healthy skin, hair, nails and good complexion as well as fat loss and lean body tissue development.

  1. Dr Dahler, thanks for your concern and comments. On behalf of Dr. Jockers, he does say that it is a ‘rare treat.’ I am sure that having this cake instead of a ‘bakery’ cake or even a home made cake with white flour, sugar and the like, would be a good alternative for a festive affair such as a birthday. It is evident in what he says that he is not advocating eating it often.

  2. Very good. We used loganberries and sour cherries. Nice combination to contrast with the sweet pound cake. A few slivered almonds on top for some gentle crunch.
