Keto Chocolate Cake

This keto chocolate cake recipe is a slightly modified version from my friend Megan Kelly.  She has an incredible site Renewing All Things – Biblically Based Health, Nutrition and Lifestyle specializing in neurobiology, healing, and mental health.

Yield 8 Large Cake Slices

Ingredients:

Frosting Ingredients:

  • ½ cup of raw cacao powder
  • 3 small ripe Hass avocados
  • 2 full squirts of chocolate stevia
  • 1/8 tsp of pink salt
  • ¼ cup of coconut oil (melted)

Instructions:

Step #1:  Begin by preheating the oven to 350 degrees.

Step #2:  Mix both the wet and dry ingredients together separately.

Step #3:  Combine the dry and wet ingredients together.

Step #4:  Coconut flour can often be very tough to mix so you can use a blender or food processor but only blend it until it is mixed together and be careful not to overdo it.

Step #5:  Grease a large baking pan (9x13) or 2 small pans and pour in the batter.

Step #6:  Bake the mixture for 35-40 minutes (25-30 minutes if using smaller pans). Check if the cake is done by putting a toothpick to see if it comes out clean to ensure it is cooked through.

Step #7:  Let the finished cake cool and top it with the chocolate frosting.

Chocolate Frosting Instructions:

Step #1:  Mix all the ingredients together in a food processor until it is all whipped up.

Step #2:  You can serve this immediately and store it in the refrigerator for up to a week.

Step #3:  If you want to store it longer, you can put it in the freezer.

Step #4:  Make sure the cake cools down before applying the frosting or it will melt into a chocolate liquid.

Special Notes

In Megan’s original recipe, she had ¾ – 1 cup of honey in the cake and ½ cup of maple syrup in the frosting.  This is WAY TOO MUCH sugar for my liking so I changed the recipe and substituted keto maple syrup which is a combination of natural, non-sugar sweeteners in monk fruit and erythritol.

Coconut flour is very drying and absorbs a lot of fluid.  This is why we use 16 eggs in this recipe to get the coconut flour to bake properly and form into a fluffy cake.

If you are looking for an amazing keto chocolate cake recipe for a birthday or special party, you will not find a better one than this!  This recipe tastes amazing, can be made in less than an hour and is ketogenic and fat burning!!

I love cacao, which is the foundation of chocolate.  Cacao and chocolate are rich in antioxidants and compounds that help to stimulate neurotransmitter production to improve dopamine, serotonin and endorphin levels so you feel amazing and are able to think sharp and clear!

This recipe is loaded with healthy fat sources from coconut flour, coconut oil, organic eggs, avocados and cacao powder.  The eggs also provide a good amount of healthy protein and you have lots of fiber from the coconut flour to support the gut microbiome.

    1. yes I cant believe that!!! was gonna make this until I saw how many eggs….unfortunately I cant really afford to use over 1 dozen eggs for 1 cake recipe!!!

  1. If I was going to use monk fruit what measurements would you suggest. I am still trying to figure out how the different sweetners can be exchanged

  2. Gosh I would have to get a few more chickens if I wanted to make this cake lol!
    I wonder if some avocado or organic applesauce could be substituted for some of the eggs?

  3. If this chocolate cake is as good as you say, and can fit into keto plan, I’ll splurge on the eggs. How much do u pay for a small square bakery cake!? This sounds worth a try to me! Thanx

    1. I made this cake and baked it 35 minutes and it was so dry that the frosting wouldn’t even help!!! I felt like I wasted 16 organic/pastured eggs but I crumbled the dry cake up and made frosting with kite hill cream cheese grass fed butter and confectioners swerve and mixed together and rolled into balls. And… I added coconut milk to the avocado frosting to make it into pudding so no waste. I love Keto desserts but I will never make this cake again!

      1. So sorry to hear this Paula, yes we found that the recipe was a little off and we added 1/2 cup of organic full-fat coconut milk and increased the chocolate stevia to 5 full droppers and it came out fabulous. We have now updated the recipe.

  4. I have a lot of eggs on hand from my chickens so I was excited to try this recipe. I usually am satisfied with less sugar in recipes, but this cake was very unsweetened. I did not make the icing because I do not usually like icing so maybe that is where some sweetness is that I’m missing. I am going to try it again with some monkfruit instead of stevia.

    sweetener is needed ..
    I usually prepare to make a recipe twice…original and my tweeked version.
    Off topic here, Doc but I’m finding it harder to fast as the temperature outside is colder.
    Any suggestions?

  7. What a delightful birthday cake idea. I think I would have it for breakfast since the eggs are all in and I with that wonderful chocolate and a boost of coffee – I would be set for the day. Beautiful pictures. Again, love, love, love the idea of a nutritious cake that isn’t tooth achingly sweet.

  11. I usually love your recipes but this cake was so dry and flavorless that I will never make it again! I followed the directions exactly and baked it the lesser amount of time… sorry, but don’t want others to waste that many eggs and have a flop!

  13. I am so disappointed…..I was so excited to make this cake and it was a total disaster! I followed the recipe exactly and my family and I hated it! It was such a waste of ingredients. Then this morning I made Angel’s chocolate chip cookies and they were literally disgusting…I don’t understand what is going on….please advise!

  14. I made this yesterday. It was really bad. The cake was so dry and the icing tasted bitter even after adding a little extra Chocolate Stevia. Below in the notes you mention Keto Maple Syrup but I did not and do not see it in the recipe. Maybe if this was added it would taste better.
