Raw Grain-Less Key Lime Pie

Raw Key Lime Pie Crust Ingredients:
1/2 cup raw sprouted sunflower seeds
1/2 cup raw sprouted pumpkin seeds
2 pitted raw dates
1 tsp. pink salt
Key Lime Pie Crust Instructions:
Pulse all ingredients in a food possessor until it reaches a dough like consistency.
Line muffin tin with unbleached muffin tin liner.
Form dough into a cup.
Pour filling into cup.
Freeze for 1 hour.
Key Lime Pie Filling Ingredients:
1 young coconut
1/2 cup raw young coconut water
10 drops organic stevia extract
Juice and zest from two limes
Instead of young coconut and coconut water you could use 1 can of organic coconut milk
Key Lime Pie Filling Instructions:
Blend all ingredients in high powered blender or vita mix until creamy.
Pour into your crust.

This is a fantastic grain-free, superfood desert. You will absolutely love this. This is a little different than our SuperCharged Key Lime Pie recipe in that it has sprouted seeds.
When you sprout seeds it unlocks the enzymes and gets rid of the anti-nutrients in the seeds. This process makes the seeds more bioavailable and nutrient dense. This takes more time than using coconut or almond flour but you get added nutritional benefits.
Coconut oil and avocados are two of the best calorie rich foods because they are full of good fats that help train our body to make healthy cells and enhance our hormones. Healthy hormones = Healthy Body and Healthy Physique. Good fats are the key to healthy hormones!
Stevia and small amount of dates are the best sweeteners as they are full of nutrition and are low-glycemic. The lime juice in the filling lowers the glycemic impact of this tasty desert along with giving it a nice citrus flavor. Enjoy!
