SuperCharged Ginger Dressing

SuperCharged Ginger Dressing:

This Recipe is by my friend Kelcie Yeo.  She has one of my favorite recipe blogs “Kelcie’s Kreations” that you can find here

Ginger Dressing Ingredients:

3 tbsp. organic dijon mustard
1 tbsp. raw honey
1/2 cup raw olive oil
2 tbsp. organic ground ginger
1/4 cup Beyond Organic plain amasai
1/4 cup raw coconut vinegar

Optional Ingredients:  Instead of Amasai you could use raw, grass-fed yogurt or kefir or for a vegan version you could use Coconut Milk or Coconut Milk Kefir.

Ginger Dressing Instructions:

Whisk together ginger, mustard, honey, olive oil and amasai or coconut milk kefir.
Add in vinegar.
Pour over veggie salad.

Citrus Avocado Salad:

2 cups romaine lettuce
1 avocado
1/2 grapefruit
1/4 cup pumpkin seeds
Red onion
Fresh squeezed Lemon over the salad

Full Meal Option:
Serve with green-finished steak as in the picture above or another healthy organic protein source.

Dr Jockers Comments: 

Ginger dressing are quite popular and if made with the right ingredients can be extremely nutritious.  Ginger itself is loaded with anti-oxidants is very helpful for stomach acid secretion and bile salt secretion.  This makes ginger very helpful for people with comprised digestive systems and liver/gall bladder problems.  It also helps relieve nausea and is highly recommended for pregnant women to reduce symptoms of morning sickness.  It is also very good at reducing pain and inflammation in the joints and muscles.

Using a clean probiotic enriched thickener such as Beyond Organic Amasai or Coconut Milk Kefir provides essential fatty acids, probiotics, enzymes and organic acids.  We want to consume as much live fermented foods as possible as these are powerful for healthy digestion and immune function.
