Sugar free marshmallows is a slightly modified recipe from my friend Megan Kelly. She has an incredible site Renewing All Things – Biblically Based Health, Nutrition and Lifestyle specializing in neurobiology, healing, and mental health. Enjoy these beautiful sugar-free marshmallows!

Here are several options for making different variations, depending if you want to make them sugar free (with stevia), or use a natural sweetener like honey or maple syrup.  Typically you need a hand mixer or mixing machine, but I also provided one recipe you can simply use a blender for.

Sweet Collagen Vanilla Sugar Free Marshmallows

Yield 15 Marshmallows

Ingredients:

Optional:

Vanilla with Sweetener:

Sugar Free Chocolate:

  • 1 cup water
  • 3 tablespoons gelatin
  • 3 1/2 tablespoons raw cacao
  • 3/4 tsp liquid stevia

Chocolate Marshmallows using Blender:

Instructions (Using Mixer):

Step #1:  Place the 3-tbsp. gelatin into the bowl of a mixer along with 1/2 cup water.

Step #2:  Mix together and let sit for 5 minutes to gel.

Step #3:  Get the whisk attachment if using a machine or ready or get out a hand mixer.

Step #4:  In a small saucepan, heat up 1/2 cup water over medium high heat.

Step #5:  Once the water reaches just about boil temperature, remove from the heat.

Step #6:  Turn the mixer on low speed and, while running, slowly pour the hot water down the side of the bowl into the gelatin mixture.

Step #7:  Once you have added all of the water, add in vanilla extract and liquid stevia, and increase the speed to medium.

Step #8:  Beat at medium-high for 1-2 minutes than increase speed to high.

Step #9:  Continue to whip until the mixture becomes slightly thick, approximately 7-10 minutes.

Step #10:  Use any pan- a bread loaf pan works well. Lightly grease your pan with some coconut oil.

Step #11:  Once your marshmallow mixture is starting to look like it has some body to it, pour the mixture into the pan.

Step #12:  Allow to sit in fridge until set.

Step #13:  Once marshmallows have set for a few hours you can start to cut into desired shapes.

Store in an airtight container in fridge.

For Chocolate Marshmallows using Blender:

Step #1:  Grease a baking dish with coconut oil and set aside.

Step #2:  In a small saucepan, boil 1 1/4 cups water.

Step #3:  Then, in a high-powered blender, add the gelatin and 1/2 cold water.

Step #4:  Allow it to sit for a few minutes and gel.

Step #5:  Next, add the rest of the ingredients to the blender including the boiling water.

Step #6:  Blend for 1-2 minutes

Step #7:  Pour into your greased baking dish- I use a square cooking dish.

Step #8:  Place in fridge until set

Step #9:  Slice into cubes and store in fridge.

  • Blending times will vary based on the blending technique you use.
  • If using stevia you will have to beat the marshmallows longer
  • If using maple syrup or honey the beating time will be less
  • Beating time can change depending on how hot your water is.

One very common question I hear is “why did mine get a gummy layer on bottom?”  This is typically due to one of the following issues:

  1. Water may not have been hot enough.
  2. Marshmallows were not beaten long enough.

  2. I’m not able to digest coconut oil well, so I’ve been successfully substituting peanut butter in its place. Still delicious. I only use the blender method and pour them into silicone ice cube trays with lids and store in the fridge.

    What I’d like to know is if there are any nutrient values for these recipes. Thanks for your answer!

    1. Thanks for the input Jody! No I do not keep track of those values. All of my recipes are designed to be blood sugar friendly and full of healthy ingredients.   3. Hi i ordered great lakes gelatin flakes to make your marshmallow recipe but not sure it will work as this gelatin seems to not be solidifying. Can you help?

    1. Hey Helena, I am so sorry to hear this! I have never used this brand of gelatin because we love and use this brand at my house. Contacting the company Great Lakes Gelatin may help and someone can help you understand why the gelatin isn’t firming up.
