This is a slightly modified recipe from my friend Sarah Stanley who has a love for living free (the name of her book is “Living Freely”), running and competing in marathons and she has a great recipe blog called SarahStanleyinspired.com

Whipped Pumpkin Spice Latte Ingredients:

2 tbsps of organic canned pumpkin

2 tbsps of organic full fat coconut milk

½ tsp of organic cinnamon

¼ tsp of ground organic cloves

3-5 drops of liquid stevia

Optional Ingredients:

¼ tsp of ground ginger

¼ tsp of ground nutmeg

Whipped Pumpkin Spice Latte Instructions:

  1. Chill the coconut milk in the refrigerator overnight and whip together the following morning. Use amount as needed.
  2. Combine all the ingredients in a small bowl and whisk together well until fully combined.

Prep time: 1 minute.

I have been getting requests for a healthy, sugar-free spiced latte recipe for a while.  Here is a great one!  You can make this quickly and it is a perfect breakfast or evening treat.

Cinnamon and cloves have a ton of blood sugar stabilizing anti-oxidant compounds.  Clove is considered the most anti-oxidant rich herb per volume and it is also a great natural anti-microbial.

I LOVE to use ginger in mine as ginger supports the production of digestive juices such as stomach acid, bile and pancreatic enzymes.  Using ginger in your recipes throughout the day is one of the best tips for improving the entire digestive process.  It doubles as a powerful anti-inflammatory agent to reduce pain and swelling in the body.

2 tablespoons of pumpkin isn’t much, but it gives you about 3-4 grams of net carbs.  This is low enough to have and maintain a fat burning physiology, especially since you are combining those carbs with coconut fats and herbs like cinnamon that improve blood sugar stabilization.

I would recommend using stevia or possibly xylitol if you respond well to it as your additional sweetener to keep the carb count low.   Try this out and let know how you like it!

    I assume this is supposed to be mixed into 1-2 cups of coffee? Currently, I am on an elimination diet, but look forward to trying this once I’m back drinking coffee. Always looking for healthy, warm beverages to drink on the cold days here in Minnesota.
