Coconut Keto Fudge Brownies

Yield 6 Medium Sized Brownies

Ingredients:

Optional Ingredients:

  • ½ cup of organic honey or grade B maple syrup (although these wouldn't make it keto) instead of stevia. If you do this, you can reduce the eggs to 3.

Instructions:

Step #1:  Preheat the oven to 300 and grease a glass baking dish (8×8 or 9×9).

Step #2:  Melt the butter.

Step #3:  Mix together all ingredients. You can do this by hand or with an electric mixer or high-powered blender.

Step #4:  Pour into the baking dish and bake for 30-35 minutes, until a toothpick inserted into the center comes out clean. Cool for 30 minutes before cutting or removing from the pan.

These store well at room temperature or in the fridge for a few days. Make sure you keep them in an airtight container.

I absolutely LOVE brownies and these are incredible!  Chocolate and coconut are a phenomenal superfood combination that boosts brain function and neurotransmitter activity.  The pasture-raised eggs provide high quality protein, fat soluble antioxidants, CLA and omega-3 fatty acids! What a combination!!!

Coconut flour is an excellent low, carb prebiotic fiber that is a great base and provides our digestive system with good fuel to support a healthy microbiome.  Grass-fed butter is rich in butyrate which helps to heal the intestinal lining and the combination of ingredients has a great ketogenic effect on the body which reduces inflammation and improves fat burning.

Megan’s original recipe calls for grade B maple syrup, but I substituted chocolate flavored (Sweet Leaf) stevia in order to keep this low carb.  25 drops should be sufficient but feel free to flavor to your desired level of sweetness!  Enjoy!

  1. The ratio of ingredients seems off – made this, very granular, nothing like the picture – was barely ok… (ate it as didn’t want to throw away, so it wasn’t horrible but won’t be making again).

    1. Sorry to hear that Jenn! We had taken out the 1/2 cup of maple syrup and replaced it with stevia but forgot to increase the amount of eggs.

      We doubled the eggs and it comes out very good!

        1. Hi Rebecca, The recipe has already been edited. We noted in the optional ingredients that you can add the syrup back in but you would need to reduce the eggs to 3.

  2. How many brownies does this make? I see the serving size only says one brownie but no weight info on it. I made This and enjoyed it but i quadruppled the stevia measurement.

  3. Based on your previous comment, if I wanted to use maple syrup instead of the stevia, would I halve the number of eggs?

  4. The nutrition info shows only 3 net carbs per serving and no grams of sugar, but how can that be if you are using 1/2 cup of chocolate chips which contain 5 net carbs and 4 grams sugar per Tbs? 1/2 cup in 6 brownies would be 1.3 Tbs. per brownie, which would have 6.5 net carbs and 5.2 grams of sugar. Not to be a nitpicker, but the nutrition info is significantly off and maybe should be updated? ‘Cause who eats just one?
    If I make these I think I will use cacao nibs instead!
