Yield 12 Pancakes
8 organic eggs
8 tbsp. grass-fed yogurt
1 cup of coconut oil, melted.
20 drops liquid stevia
1/2 tsp. pink salt
8 tbsp. coconut flour
1/2 tsp. aluminum –free baking powder
1 cup organic blueberries
Step #1: Mix all wet ingredients (except yogurt) together in a large bowl.
Step #2: Add flour, salt, baking powder and berries.
Step #3: Let the mixture sit for about 5 minutes.
Step #4: Pour onto a greased skillet (greased with coconut oil) at low heat.
Step #5: Flip and serve!
Step #6: Add grass-fed yogurt on top after the pancakes are finished...it tastes good and adds the probiotics, protein and healthy fats.
