Vanilla Almond Christmas Cookies
Christmas cookies are a family favorite for most people! This vanilla almond Christmas cookies is a modified recipe is by my friend Kelcie Yeo. We took out the honey and added keto maple syrup which is a non-sugar natural sweetener that uses monk fruit and the sugar alcohol erythritol.

Keto Vanilla Almond Christmas Cookies

Yield 24 cookies
Ingredients:
- 3 cups blanched almond flour
- 1/2 cup coconut flour
- 10 tbsp. melted grass-fed butter/ghee/coconut oil
- 2 tbsp. vanilla extract
- 1 tsp. almond extract
- 1 pastured egg
- 1/2 cup Honest Keto Maple syrup
- 15 drops vanilla cream stevia
- 1 tsp. baking soda
Instructions:
Step #1: Mix flours and baking soda together.
Step #2: Whisk egg, melted butter/oil, vanilla extract, almond extract, maple syrup and stevia together.
Step #3: Pour wet ingredients into bowl with dry ingredients. Mix everything together.
Step #4: Let cookie dough sit on counter for 10 minutes.
Step #5: Form into balls and slightly flatten on baking sheet lined with parchment paper.
Step #6: Bake at 350 for 10-15 minutes.

This is an amazing holiday style cookie that is completely grain and sugar free. It uses a non-sugar, natural sweetener in stevia as well as monk fruit and erythritol. Grains contain starchy carbs and are inflammatory to the body and the intestinal system. A healing diet looks to remove the grains and focus on good fats like coconut oil, grass-fed butter in this recipe.
This is an incredible cookie with a very buttery flavor. Getting a high-quality grass-fed butter/ghee makes this recipe that much better. You and the family will absolutely love this!

Do you ever have concern about the amount of almond flour/meal that a lot of Paleos use because of the high omega 6 content? Also, wouldn’t cooking with it or heating it damage the fat in it?
Hey Jackie,
I don’t recommend consuming much almond flour/meal due to the omega 6 and that many can develop food sensitivities to nuts from too much nut consumption. This isn’t a healthy recipe but it is much better than using grains.
Thank you for the recipe. I tested allergic to coconut several years ago and have not been retested, but would like to know what I can substitute for coconut flour. Additionally, can I substitute olive oil for coconut oil in other recipes. Thanks!
You can substitute almond flour and a better substitute for coconut oil is butter.
You say that this is completely grain free, however I learned from you, and confirmed with the company, that Honest brand uses corn fiber even though the ingredients says vegetable fiber. And, corn is a grain, not a vegetable. So, I don’t get it. I truly appreciate all that you do for our health. Can you help me understand about the grain free terminology containing corn?

You could also try using 2 tbsps of stevia and adding in more 3 more eggs
Your comments say the recipe uses monk fruit and erythritol but they are not listed in the ingredients. Am I missing something?
The maple syrup has these sugars in it. But we need to know how to make this Keto maple syrup.🤔🙄
