Dr Jockers Comments:

This is a highly anti-inflammatory recipe that is easy on the digestion and provides tons of good fats, antioxidants and clean protein.  Chicken is very easy on the digestive system and when it is from pasture-fed chickens it has minimal toxins and lots of healthy fats and clean protein.

The coconut oil mayonnaise is a tremendous upgrade over any other form of mayo because the primary fat is coconut.  Cinnamon, nutmeg and raisins provide lots of antioxidants to reduce oxidative stress levels in the body.  Celery provides a great alkaline mineral balance to improve energy levels.

I personally love to include cucumber, bell peppers of different colors and Italian herbs to this for added antioxidants and flavor.  Try this out and let us know what you think in the comments box below!

  1. I make mine with avocodo instead of the mayo. I also include toasted almond slivers and sweet Ga vidalia onions. Amazing! It is delicious warmed up, too!
