Super Brain Salmon Salad:

This salmon salad recipe is loaded with powerful anti-oxidants, essential fatty acids and unique phytonutrients that help protect your brain tissue and enhance cognitive acceleration allowing you to enjoy tasty food while you grow smarter!  You will love the super brain salmon salad!

Yield 4 Servings

Ingredients:

4 (6 oz fillets) wild caught Alaskan Salmon fillets

2 Tbsps. of organic coconut oil

1 avocado, diced

1 cup of fresh English peas

2 stalks celery, diced

2 bell peppers (red and yellow) cut into large pieces

1 lemon/lime, freshly squeezed

Black pepper and pink salt to taste

1 tsp of dried oregano

1 cup of fresh parsley or 1 cup of fresh cilantro

4 tbsp of extra virgin olive oil

Servings:  4

Instructions:

Step #1:  Put 2 tbsps of coconut oil on a pan and cook at a low-medium heat until cooked through – usually 10 mins.  Be careful not to burn or overcook.

Step #2:  Steam the peas, we usually get them frozen and steam them.

Step #3:  Have all of the ingredients of your veggie salad ready on the side.  Place a generous amount of the vegetables on each plate.

Step #4:  Now you will top it with the warm salmon.

Step #5:  Add freshly squeezed lemon juice or concentrated lemon juice, olive oil, salt/pepper and fresh or dried herbs to your salmon salad.
