Coconut Flour Zucchini Fries

Anti-Inflammatory Coconut Flour Zucchini Fries

Ingredients
- 3 zucchini (1 lb.)
- 1 cup coconut flour
- 2 tbsps. of EV coconut oil
- 1 pasture-raised egg
- 2 tbsp. Himalayan Pink Salt
- 2 teaspoons dried oregano powder
- 1/2 teaspoon garlic powder
- 2 teaspoons turmeric powder
- Pinch of black pepper
- 1 teaspoon dry mustard powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon dried dill weed
- 1/2 teaspoon celery salt or pulverized celery seed
Instructions
Step #1: Heat oven to 450ºF. Trim the zucchini by cutting crosswise in half, then cutting each piece into 1/4-inch sticks.
Step #2: Add flour, coconut oil and spices into a large zip lock bag; shake gently to combine.
Step #3: Whisk egg in medium bowl and add zucchini; toss to coat.
Step #4: Using tongs, place 1/4 of the zucchini in bag; close bag and shake to evenly coat. Spread onto baking sheet that has been smothered with extra coconut oil. Repeat with remaining zucchini.
Step #5: Bake for 12 to 13 min. or until golden brown, turning the baking tray 180 degrees after 7 min to facilitate even baking.
Step #6: Remove the baked fries from the oven and serve them with your favorite dipping sauce.

I modified this recipe to add tons of my favorite herbs in turmeric and oregano. Turmeric is an extraordinary anti-inflammatory powerhouse and oregano is anti-microbial. The combination synergizes to keep the immune system strong and reduce inflammation throughout the entire body.
These don’t taste quite like traditional French fries but you will still be impressed with the flavor and texture and they are low carb and rich in good fats and fiber. I prefer a lot of coconut oil like I have in this recipe as it makes them more oil and rich. Unlike vegetable oils the coconut oil will not contribute to acne but instead will help your skin become softer and smoother. The extra coconut oil also improves your energy and reduces cravings.
You can vary the spices on these depending upon what you like and want. You could add more garlic or onion into these and less turmeric and it will still come out quite good. These are good all alone or mixed with sweet potato fries a salad and a healthy protein source. Enjoy!
