Coconut Flour Cookie Dough Bites

Coconut Flour Cookie Dough Bites

Yield 18 Bites
Ingredients:
- 1 cup of coconut flour
- ½ cup of grass-fed butter or coconut oil
- 4 pasture-raised eggs
- ½ cup of coconut flakes
- Pinch of pink salt
- 1 tsp of vanilla
- 3 ½ tsps. of Rx Allulose Syrup or 1–2 tbsps. of liquid stevia to taste
- ½ - 1 cup of organic unsweetened chocolate chips
Instructions:
Step #1: Preheat the oven to 375 degrees.
Step #2: Melt the syrup and butter together in a small pot.
Step #3: In a large bowl, mix together the butter, stevia or syrup, eggs, vanilla extract and sea salt.
Step #4: Stir in the coconut flour, shredded coconut and chocolate chips.
Step #5: Line a baking sheet with parchment paper and form batter into bite size balls- just press together in your hands or scoop and press and shape into whatever you shape or size you would like.
Step #6: Bake for 12-15 or until golden brown.

Megan’s Comments:
I find that coconut flour recipes are either a hit or miss. It can be challenging to bake with, as it is so dry.
These actually turned out pretty well! If you are looking for a low-carb/grain-free chocolate chip cookie recipe, this is your winner!
Notes:
- You can form the dough into whatever size or shape you would like. Bite-sized cookie dough balls or place on the baking sheet and gently press down so they are in the shape of a cookie.
- I like to use cacao nibs or crushed dark chocolate!

We absolutely love using coconut flour because it is a healthy fiber and fat source that is anti-inflammatory. Adding in grass-fed butter and eggs provides tons of essential fats and fat-soluble nutrients such as vitamin A, phosphatidylserine, vitamin E, vitamin K2 and butyric acid.
I recommend using the Rx Allulose Syrup or stevia to avoid the blood sugar impact that traditional honey or maple syrup contains. Allulose is a natural sweetener that tastes like sugar but has 90% fewer calories and has minimal impact on blood sugar and insulin levels. It can replace sugar in recipes in a 1:1 ratio and you can read more about allulose here.
