Keto Cheesecake Bombs

Yield 8 bombs

Ingredients:

4 oz cream cheese, softened

1/4 cup almond butter, softened

2 squirts liquid stevia

1/2 cup organic dark chocolate chips

Instructions:

Step 1: In a medium bowl, combine almond butter, cream cheese and stevia together. Mix together until well combined.

Step 2: Scoop small 1 tbsp balls onto prepared plate and dip into crusted chocolate chips. Freeze for 2 hours or until solid.

Step 3: Store in airtight container in freezer.

Special Notes:

We are using an organic, pasture-raised dairy cream cheese as the base for this recipe.  If you have a dairy sensitivity, you can instead use a dairy free cream cheese.  You can get this cashew cheese spread or a coconut cream based cream cheese here.

If you have a food sensitivity to almond butter, you can use cashew butter or peanut butter instead.  We use the Lily’s brand chocolate chips which are flavored with stevia and erythritol.  If you struggle with either of these sweeteners you can always use unsweetened baking chocolate.

This keto cheesecake bombs taste amazing and are full of fat burning ingredients.  If you are looking for a great tasting keto snack or dessert, you will love this!

This recipe has a combination of healthy fats, fiber and antioxidants.  If you are using organic, pasture-raised dairy cream cheese or the cashew or coconut cream based cream cheeses those provide healthy fats.  The almond butter provides fats and fiber.  The dark chocolate provides antioxidant flavonoids.

This cheesecake bombs recipe is flavored with stevia, which is very low-carb and will not spike your blood sugar.  Instead, it will help keep your insulin under control which will allow your body to burn fat for fuel!

  1. Sounds like the ‘bombs’ will taste great. Can I substitute erythritol for stevia? Would it change the consistency?
