Keto Shortbread Bacon Bites

Yield 12 Bacon Bites
Ingredients:
2 Tablespoons stevia, powdered
2-3 strips of bacon, cut into small pieces.
6 tablespoons butter, softened.
2 cups almond flour
1 teaspoon vanilla extract
1/2 teaspoon of cinnamon
Pinch of pink salt
Instructions:
Step #1: Preheat oven to 350*F and prepare cookie sheet with parchment paper.
Step #2: In a cast-iron skillet, cook the bacon over medium heat until cooked through. When done, remove bacon from skillet and place in separate bowl.
Step #3: In a medium bowl, mix the butter and sweetener together until creamy and fluffy. Add almond flour, pink salt and vanilla extract and mix until well combined.
Step #4: Using your hands, roll the mixture until a dough forms. Use a tablespoon of dough and form little squares, placing each square about 1 inch apart. Press down with a spoon and sprinkle cooked bacon on top of cookie dough.
Step #5: Bake for 15 mins or until slightly brown. Remove from oven and let it completely cool before removing cookies from cookie sheet.
Step #6: Store cookies in upright container for up to 5 days.

Special Notes
When it comes to bacon, I personally do not advocate pork or pig meat and you can read about why that is in this article. However, I do believe that grass-fed beef bacon or turkey bacon consumed in moderation can be a very healthy part of your diet.
One of the keys if you are going to consume bacon on a regular basis, is to be sure to have it with a lot of antioxidants such as salads as the high temperature cooking can increase the amount of carcinogenic heterocyclic amines. You can get grass-fed beef bacon and turkey bacon at your local Whole Foods or health food store.

These keto shortbread bacon bites are a unique and tasty fat burning recipe that would be great to bring to a party! This great side dish is full of healthy, anti-inflammatory ingredients and it combines the sweet flavor of a cookie with the savory bacon.
As I described above, it is always important to get the highest quality meat products and that is why I like getting 100% grass-fed beef bacon. When cows eat grass, they have more omega 3 fatty acids, antioxidants and conjugated linoleic acid (CLA) which reduce inflammation in the body.
Typically, when I am consuming this, I am using a lot of herbs such as basil, oregano, thyme, rosemary, etc. The antioxidants help protect the body from dangerous chemicals that are created when we cook meat at a high temperature such as with bacon.
In this recipe, we included the cinnamon which goes nicely with the cookie to provide a powerhouse of protective antioxidants to help buffer the body from the carcinogenic heterocyclic amines we consume when we eat bacon that is cooked down to where it is very crunchy.
