Keto Turkey Sausage Omelette

This keto turkey sausage omelette recipe was made by my wife Angel.  Check out Angel’s websiteinstagram and facebook page where she shares stories and pics about our life.

Keto Turkey Sausage Omelette

Yield 4 Omelettes

Ingredients:

12 large organic eggs

Sea salt and pepper

8 ounces turkey sausage, sliced

1 tsp dried thyme

1 tsp fresh parsley, chopped

2 tbsp coconut oil

1 cup goat cheese, sliced

Extra parsley, to garnish

Instructions:

Step 1: Place the eggs in a large bowl, add 2 tbsp water, season with salt and pepper, and whisk until well combined, then set aside.

Step 2: Heat frying pan, toss in the turkey sausage and cook until golden and crispy. Stir in the herbs, then remove and set aside.

Step 3: Wipe out the pan with paper towel, melt some of the coconut oil and add 1/4 of egg mixture. Swirl it around the entire base of the pan, then add 1/4 of sausage and goat cheese to cover half of the omelette. Once the omelette starts to set, fold it in half and slide it onto a plate.

Step 4: Repeat with the remaining ingredients to make 4 omelettes. Serve omelettes warm and garnish with extra parsley.

Special Notes:

Feel free to replace the goat cheese with a dairy-free version or dairy-free feta cheese like this here. The feta also adds a great flavor to the recipe.  If you have trouble finding turkey sausage, you can also substitute chicken or beef sausage.  We always recommend getting organic and pasture-raised animal products.
