Creamy Guacamole Coconut Wrap

This is a great lunch time recipe that is easy on the digestive system and tastes great.  The good fats provide satiety so you feel very satisfied and high energy all afternoon.

Guacamole Coconut Wrap Ingredients

2 Coconut flour wraps

1 handful of green leafy veggies (spinach, collards or whatever you like)

2 avocados

¼ cup of organic coconut milk (carton variety)

1/8 cup of organic apple cider vinegar (ACV)

½ organic tomato diced

¼ red onion diced

Herbs (I use herbamare)

Optional Ingredients:

Free range chicken or grass-fed cheese slices for protein

Guacamole Coconut Wrap Instructions

Mash guacamole and add in coconut milk and ACV and mix together until smooth, creamy and tangy.  Add in diced tomatoes and onions and herbs and mix until you get your desired flavor

Add guacamole to coconut wraps (start small as these wraps can’t hold a lot of guacamole) and then add your greens.

These coconut flour wraps are a fantastic prebiotic fiber that helps improve the strength of the gut flora and improve gut motility.  They also taste great!

The guacamole tastes amazing and is smooth and creamy.  Feel free to add whatever veggies you like and a bit of clean protein if you want!

This is a fantastic ketogenic style lunch that is low carb and rich in good fats and micronutrients!  Enjoy!
