Cranberry Orange Muffins

Yield 12 muffins
Ingredients:
- 8 pasture-raised eggs
- 1 cup of melted virgin coconut oil
- ½ cup melted grass-fed butter
- 10 drops organic essential oil of orange
- 1 tbsp. vanilla
- 15 drops of vanilla cream stevia
- 1 cup blanched almond flour
- ½ cup coconut flour
- 1 ½ cups organic cranberry sauce
- 1 tsp aluminum free baking powder
- 1 tsp pink salt
Instructions:
Step #1: Gather all the necessary ingredients
Step #2: In a food processor blend together eggs, melted coconut oil, melted grass-fed butter, essential oils, stevia, and vanilla until it is creamy.
Step #3: Add in flours, cranberry sauce, baking powder and salt
Step #4: Mix all the ingredients well
Step #5: Pour into large bowl and let it sit for 20 minutes to thicken
Step #6: Spoon out batter into lined muffin tin
Step #7: Bake at 350 degrees for 20-25 minutes until it is finished.

I tried the recipe for Cranberry Orange Muffins. These are delicious…even better the next day, as the second day they seem to be less crumbly. Love them.
Wanted to say, though, that there is NO WAY 10 mins. is enough to bake them!!! I tried 10 mins. 4 times, and they were finally baked through.
Test kitchen might want to see if the “10 mins” baking time published was a typo.
These muffins sound absolutely amazing! Only 1 big problem…I can not use sugar at all and cranberry sauce is full of sugar. Could I substitute dried, apple-sweetened cranberries. What adjustments would I make for the moisture lost from the cranberry sauce? Apple sauce? What ratio? Thanks!! I have really missed breads and muffins since going grain-free, sugar-free, yeast-free!
You could try making your own low-carb cranberry sauce! You could do this by mashing up some cranberries with a touch of water, and stevia or monk fruit to taste! You really would just need to experiment with the proportions to see how you like it!
So I’m wondering, if I’m not wanting to go fully ketogenic for various reasons, is it ok to consume some of these very high fat recipes, or should I not consume them unless I’m fully keto committed?

Also, simply following a lower-carb, higher fat diet can also be beneficial as long as you are consuming HEALTHY fats.
My son has an anaphylactic allergy to nuts. Can I just use all coconut flour in this recipe, is the almond flour for flavour or consistency? Thanks
Hey Diane, you could use all coconut flour but you will likely need to alter the rest of the recipe to get the right consistency. You may also be able to try cassava flour as an alternative.
What substitute can I use for stevia? Maple syrup? Honey? Coconut sugar? How much would you use?
Yes you can use these but do so in moderation!
Want to make these for the holidays, but my sister is allergic to coconut. What flour can I use instead? I will probably us a mild evoo instead of the coconut oil. Thanks!
You can use almond flour instead and I would recommend if you take out the coconut oil to use butter rather than EVOO!
I’m not a huge fan of stevia. If I use coconut sugar or maple syrup instead, does anyone know how much? I know baking is a “science” and if the ratios are “off”, you won’t get the desired results. Thanks all!

I have PKD and so need to avoid almonds/almond flour. Do you know of a low oxalate alternative flour that can be used instead?
