Yield 4 Tortillas
Ingredients:
- 1 cup of Cassava Flour
- 2 tbsps. of melted grass-fed butter (or olive oil)
- 2/3 cup of warm water
- Pinch of pink salt
- ¼ tsp of baking soda
- ¼ tsp of apple cider vinegar
Instructions:
Step #1: Mix the flour, pink salt, and baking soda together in a bowl.
Step #2: Add the apple cider vinegar, butter or oil, and warm water. Stir to combine.
Step #3: Divide the dough into 4 balls.
Step #4: Roll out each ball between two sheets of parchment paper.
Step #5: Cook each tortilla on a hot pan or skillet- use coconut oil or butter for frying.
Step #6: Cook on medium heat 1-2 minutes until bubbles form; flip and cook for another minute.
Step #7: Remove and continue with the rest of dough. The tortillas can be made in advance and warmed before use.

Do a person with diabetes can eat this?
Yes they can Maria!
The USDA value has the carbs listed as 38.06 grams per 100 grams (3.5 oz) cassava flour. Just figure the total for the recipe, divide by 4, and add the carbs in what you fill them with for a total. I believe the cider vinegar may have around .06 grams, the rest of the ingredients add 0 (zero) carbs.
It is not a good idea to make cassava a staple, but the nutritional benefits vs the higher carbs make it a healthier alternative to grains. 😀
How often can we allow someone on a grain free, sugar free and dairy free diet have this? My daughter just started her new diet 1 week ago with Dr. Shannon. She is missing her tortillas and breads. We are preparing a lot of things with coconut flour but it is not the same.
Hey Nimarta, you could make these with Ghee or olive oil instead of butter!
Can the cassava flour be replace by coconut flour? I have thyroid problems and cannot eat yuca.
Unfortunately it won’t come out well with coconut flour. Sorry!
