Instructions:

Step #1: In food processor or blender (I used my vita mix) blend all ingredients except oil at VERY low power. SLOWLY drizzle in oil. Let that combine for at least a minute!

Step #2:  Scoop into container and screw the lid on very tightly. Leave mayo out for 3-4 hours before refrigerating. Mayonnaise will keep in fridge for several months.

Mayonnaise seems to be a love or hate thing for most people.  As for myself, I used to hate typical process mayonnaise even before I cared about good health.  However, I absolutely love this healthy coconut oil mayo!  This is loaded with good fats whereas typical mayo is full of toxic processed vegetable oils that are high in the inflammatory provoking omega 6 fatty acids.

The combination of healthy fats in the egg yolk and coconut, antioxidants (fresh lemon), clean protein (egg white and yolk) make this a nutrient dense superfood combination!  These are all key nutrients for a healthy cranium and they help to stimulate creative juices and creative abilities!  Use it on anything you would normally use mayo or dressing on and I guarantee you will love it!  Enjoy!

  1. I have made mayo like this using MCT oil (from coconut oil) no melting involved and no coconut taste…sometimes i add a tablespoon or two of olive oil as well. Delish and so much healthier!

  2. Even thought I am using organic pastured eggs from my neighbors chickens, I have SIBO, leaky gut, Lyme disease and more. Is it safe for me to eat RAW eggs in this recipe? Thank you.

    1. Hi Rhiannon, For many people it is safe to eat raw eggs as long as they are in good condition, but it is always best to discuss this with your functional health practitioner.
