Raw Grain Free Key Lime Pie

Crust Ingredients:
- 1 cup sprouted sunflower seeds
- 1 cup sprouted pumpkin seeds
- 4 pitted raw dates
- 8 tbsp. organic coconut oil
- 1 tsp. pink salt
Instructions:
Step #1: Gather all the ingredients
Step #2: Pulse all ingredients in a food possessor until it reaches a dough like consistency.
Step #3: Line muffin tin with unbleached muffin tin liner.
Step #4: Form dough into a cup.
Step #5: Pour filling into cup.
Step #6: Freeze for 1 hour.
Filling Ingredients:

1 avocado
1 can of organic coconut milk
10 drops organic stevia extract
Juice and zest from two limes
Filling Instructions:
Step #1: Gather all the ingredients
Step #2: Blend all ingredients in high powered blender or vita mix until creamy.
Step #3: Pour into your crust.
Step #4: Freeze
Take out of the freezer after an hour and let thaw out and enjoy!

This is a fantastic grain-free, superfood desert. I LOVE key lime pie and was on a search to find a great recipe with healthy ingredients. You will absolutely love this.
We recommend using sprouted seeds but if you don’t have access to them, you can still just use the regular seeds. When you sprout seeds it unlocks the enzymes and gets rid of the anti-nutrients in the seeds. This process makes the seeds more bioavailable and nutrient dense. This takes more time than using coconut flour or almond flour but you get added nutritional benefits.
Coconut oil and avocados are two of the best calorie rich foods because they are full of good fats that help train our body to make healthy cells and enhance our hormones. Healthy hormones = Healthy Body and Healthy Physique. Good fats are the key to healthy hormones!
Stevia and small amount of dates are the best sweeteners as they are full of nutrition and are low-glycemic. The lime juice in the filling lowers the glycemic impact of this tasty desert along with giving it a nice citrus flavor. Enjoy!

Love the recipe! However I think the proportions are a bit off when it comes to the crust. The amount of ingredients provided for the crust do not provide 10 cups worth, and I also had more filling than crust (and I only used half a can of coconut milk otherwise it would be way too much). I managed to squeeze five out and they’re in the freezer now so I’m looking forward to their taste. Other than that, awesome ideas all around!! Thanks for sharing
