Chocolate Coconut Bars

Chocolate Coconut Bars

Yield 6 Bars
Ingredients:
- 1 cup of shredded coconut flakes
- ¼ cup of RxSugar
- 2 tbsps. of coconut oil
- ½ tsp of pure vanilla
- Pinch of pink salt
For the Chocolate Drizzle:
- ¼ cup of coconut oil
- 2 tbsps. of Keto Chocolate syrup
- ¼ cup of raw cacao powder
- ¼ tsp vanilla extract
- Pinch of pink salt
Instructions:
Step #1: Blend all of the coconut bar ingredients and squish into any small container and freeze for 15 minutes.
Step #2: In a small saucepan, melt coconut oil and syrup over low heat. Remove from heat and stir in remaining ingredients.
Step #3: Pour over chilled bottom layer and return to the freezer for about 15 minutes, or until the chocolate layer is hardened.

*Allulose contains carbs but is very low-calorie and low glycemic. It does not impact blood sugar and insulin levels as do normal sweeteners.

Megan’s Comments:
Gluten free, dairy free, no refined sugar, and no baking required. I love desserts. I also love eating food that makes me feel amazing, boosts metabolism, clears skin, and gives me energy. Usually, these two desires do not go together well. Wonderful news is, there are amazing treats that will actually benefit your beautiful body and satisfy your sweet tooth.
The two main stars in this show are coconut and cacao – both have amazing health properties that will change your life, or close to it. These treats are easy, no baking required, and are perfect for even the picky eaters in the household.

Dr. Jockers’ Comments:
This is a nice treat you can use as a snack anytime. Megan originally used honey, but that has way more sugar/carbs than I would normally recommend, so we substituted it with RxSugar. Allulose is a natural sweetener that tastes like sugar but has 90% fewer calories and has minimal impact on blood sugar and insulin levels.
This recipe is loaded with good fats in the coconut oil, and coconut flakes reduce the blood sugar spike and make this less inflammatory in nature. The combination of raw cacao and coconut is extraordinary for the brain.
The coconut oil contains medium chain fatty acids that are easily metabolized into ketones that feed the brain. The cacao is rich in PEA’s, which boost dopamine and theobromine, which improve circulation into the brain. I LOVE the combination of coconut and cacao for great mental drive! Enjoy this sweet treat!
