Almond Flour Mini Quiche

Almond Flour Mini Quiche

Yield 10-12 Quiche
Crust Ingredients:
- 1 cup almond flour
- 1 pasture-raised egg
- 1 tsp. sea salt
Crust Directions:
Step #1: Mix all ingredients together.
Step #2: Line muffin tin with cupcake liners.
Step #3: Place balls of dough into each cup.
Step #4: Form to the cup of muffin tin.
Step #5: Bake at 350 for 5 minutes.
Step #6: Pour egg mixture into each cup.
Egg Mixture Ingredients:
- 4 pasture-raised eggs
- 1/4 cup plain coconut milk yogurt
- 1 tsp. pink or sea salt
- 4 asparagus chopped.
- 1 tsp. nutmeg
Egg Mixture Directions:
Step #1: Mix all ingredients together.
Step #2: Pour into crust.
Step #3: Bake at 350 for 10-15 minutes.

I grew up loving when my mom would make Quiche when I was growing up! I would regularly ask for it. However, the traditional quiche is made with commercial dairy and gluten containing crusts. When I first went dairy and grain free, I thought I could never enjoy something this good…but now I can!
This is completely grain and dairy free, so it is naturally low-carb and contains many superfoods. Pasture-raised eggs are the only ones to get, and you can find them at a health food store or from a local farmer. They are rich in antioxidants, healthy essential fats and brain boosting compounds like choline and phosphatydlserine.
Coconut milk yogurt is low carb, keto and creamy and has good healthy fats to boost your metabolism and reduce inflammation. These look and taste absolutely amazing!

Thanks for the recipe. Crust came off Muffin liners fine but stuck to egg mix. I would recommend spraying them with a healthy oil.
I made mine for lunches to go with salad. Used same egg base but added diced turkey, steamed Brussels sprouts diced, a hatch chili diced, a little hatch chili salsa and mozzarella cheese with mexican spices. These were just what i had available. Tasty both hot and cold! Very good and will make again!

Can a different flour be substituted for the almond flour? Almonds are on my sensitivity list.
Yes you can try cashew, hazelnut, coconut or sunflower seed flower.
