Probiotic Blueberry Pancakes:

Blueberry pancakes are a great tasting recipe by my wife Angel, who loves to make food and home and body care recipes that support people’s journey to optimal health.  Check out my wife’s website, instagram and facebook page where she shares stories and pics about our life.  She also has a great YouTube channel you can check out as well.  You will LOVE these probiotic blueberry pancakes!!

Probiotic Blueberry Pancakes

Yield 12 Pancakes

Ingredients:

8 organic eggs

8 tbsp. grass-fed yogurt

1 cup of coconut oil, melted.

20 drops liquid stevia

1/2 tsp. pink salt

8 tbsp. coconut flour

1/2 tsp. aluminum –free baking powder

1 cup organic blueberries

Instructions:

Step #1:  Mix all wet ingredients (except yogurt) together in a large bowl.

Step #2:  Add flour, salt, baking powder and berries.

Step #3:  Let the mixture sit for about 5 minutes.

Step #4:  Pour onto a greased skillet (greased with coconut oil) at low heat.

Step #5:  Flip and serve!

Step #6:  Add grass-fed yogurt on top after the pancakes are finished...it tastes good and adds the probiotics, protein and healthy fats.

Everyone loves pancakes and now we can enjoy them grain-free. Grains are inflammatory and are hazardous to our health.  This recipe uses coconut flour and aluminum-free baking powder which are very low-carb.  Blueberries are extraordinarily rich in nutrition including anthocyanin antioxidants and are low in sugar.

Grass-fed yogurt is a great probiotic enriched drink through grass-fed milk.   The yogurt is also loaded with omega 3 fatty acids, branched chain amino acids and vitamin K2 while providing mega-doses of beneficial microorganisms.

The probiotic lifestyle is all about incorporating fermented foods into everything you consume.  Live probiotics help digest the nutrients and create greater nutritional bioavailability for everything in the meal.  Fermented foods also bring organic acids and enzymes, so the body is able to metabolize the meal with less digestive energy usage.  Try these out – they taste absolutely amazing and your family will love them!

  1. I used 3 tbsp of flour and 1 tbsp of Coconut oil. Used a 1/4 tsp of baking powder instead of an 1/8. Makes a bit thicker batter which holds up better. Excellent!

  2. How can you limit yourself to 20 carbs when each pancake if 6 carbs. The picture shows
    7 pancakes, that would be 42 carbs. What was the white thing on top of the 7 pancakes
    along with blueberries. Not worth the effort or the carbs.

    1. Hey Barbara, The topping is the yogurt noted in the recipe. There are 4 net carbs per pancake but I don’t recommend 7 pancakes as 1 serving. Blessings!
