Rosemary Chicken and Garlic Mushrooms:

The Rosemary Chicken and Garlic Mushrooms is a recipe the whole family will enjoy!   Organic chicken provides a good clean protein and contains selenium.  Chicken tastes great but it really supplies very little nutrients when compared to other animal protein sources such as grass-fed beef, bison, lamb, organic eggs, wild-caught fish, grass-fed raw cheese and non-denatured whey protein.  However, it can certantly be used on occasion as part of a supercharged lifestyle.

Mushrooms contain beta-glucan, selenium, vitamin B6, zinc, & copper that are critical for healthy immune function and the formation of the cellular anti-oxidant glutathione.  Garlic contains the nutrient allicin.  This is a powerful anti-microbial that destroys bacteria, viruses, & yeast/fungi.  Allicin is also a powerful anti-inflammatory that destroys cancer, lowers cholesterol, and reduces inflammatory damage to the heart and vasculature.

Rosemary is a great brain stimulant that prevents the breakdown of a key neurotransmitter named acetylcholine.  This molecule allows the neuronal cells that are responsible for cognitive processing and memory consolidation to communicate more effectively with one another.

Rosemary Chicken Ingredients:

2 skinless, boneless organic chicken breasts

4 tablespoons of coconut oil

1-2 lbs of your favorite mushrooms

2 cloves of garlic – diced

3 tsp of Italian herbs

Fresh or dried rosemary

1/2 tsp of pink salt

1/2 tsp of black pepper

Parsley to garnish

1/2 lemon

2 tbsp of extra virgin olive oil

Optional Ingredients:  Turmeric

Servings:  2

Prep Time:  10 mins

Cook Time:  10 mins

Rosemary Chicken Instructions:

Heat 2 tablespoons of coconut oil on stainless steel pan.  Put chicken breasts on and cook medium-rare to make it taste great but to preserve as much of the proteins and other nutrients as possible.  Too much heat will denature the proteins and damage other vital nutrients.  Once chicken is finished – put it on a plate in the oven to keep it warm.  Use the same pan and add a bit more coconut oil (1-2 tsp) and put mushrooms in and garlic in together.  Sautee for about 3-5 minutes at a low-medium heat.  Mushrooms should be slightly browned and tender.

Put everything on the same plate and squeeze lemon over it all and add olive oil.  Then add rosemary, salt, pepper and Italian herbs.  Turmeric can be mixed in as well for added anti-oxidants and superfood nutrients.  This recipe is great with a side salad such as the SuperGreen Berry Salad.  Enjoy!
